Adding Summer Squash to Pasta Dishes

Traditional Linguine with Clam Sauce, plus Yellow Squash

Traditional Linguine with Clam Sauce, plus Yellow Squash

A few days ago we were at a picnic where our hosts served Clams Casino from the grill.  As outstanding as those clams were, there were some unopened clams left over, and I was offered some to take home.  I decided to make traditional linguine with clam sauce, and having so many squash, I chopped some up and added them in, almost as an afterthought.  The squash absorbed the juices from the clams and added an overall sweetness to the dish.  Last night I tried adding squash to our favorite shrimp pasta dish, with similar results.  Both dishes were very successful.  Moral:  consider adding squash to a favorite pasta recipe, especially a seafood dish.
