I’m Glad We Like Butternut Squash

Harvest, the time of payoff for all the work.  Last year I only got 22 Butternut Squash and I doled them out carefully over the rest of the year.  Now I can go wild with soups, breads, rolls, pies, ravioli, roasted, fried, pureed, risotto…  the list is endless.  I use Butternut Squash in place of Pumpkin as it has more flavor and density.  Yum!  My harvest has gone well.  The canning shelves are full with jams, sauerkraut, ketchup, chutney, pickles, Fra Diavolo sauce, marinara sauce, hot dog relish, applesauce and stewed tomatoes. The upright freezer is full of soups, breads Bolognese sauce, eggplant slices, hors d’oeuvres and vegetables and the big chest freezer is half full (awaiting a possible deer).  Life is good.
